Hi Cat! First of all I just want to tell you sorry. It’s so frustrating when things don’t go right. I don’t think this is an issue with your technique (especially since your other layers turned out perfectly). I’m guessing it’s a problem with the specific baking chips you are using for the salted caramel layer. They could be old (even if you just bought them) or maybe the process/ingredients used to make the chips just doesn’t work when melted and combined with other ingredients. You could try a different brand of baking chips or try the following: “Replace the caramel baking chips with an equal amount of white chocolate chips, melt, and add the salted caramel sauce as directed. The resulting mousse will have a lighter caramel flavor, but if desired, you can use caramel flavoring to increase the caramel taste. Start with 1 tsp, taste, and add more if necessary.” I hope this helps and that your third layer turns out. All the best to you.

I’ve tried this layer 2x now, and I just can’t get it to work. (I have not overworked the whipped cream-I thought that was what I did wrong the first time, and was extra conscious of it the 2nd time, but same result) I think I’m going to have to scrap that layer and just serve it without it.
