So, I decided to make this as individual servings, like a parfait. I crumbled the graham crackers, put butter in a skillet and “toasted” the crumbs a little, then layered in a parfait glass the graham crackers, ice cream filling, more graham crackers and topped with homemade whipped cream. Just an update. I made this pie for the second time (review is down below) I had a problem with the crust. I took your advise and made the bottom thinner and turned out perfect. I had to substitute the pink lemonade with red raspberry lemonade and it tasted wonderful. Jan

Hi Elizabeth,
Made this for a get together with some friends and we all just loved it! My only disappointment was when I cut the pie after taking it out of the freezer and letting it rest for `15 minutes the bottom crust was so hard. I know it was frozen, but should I have put more of the cracker crumbs on the side and left the bottom a bit thinner? Great tasking and simple to make. Thanks Jan

I made it for dinner hubby and his family last night. Was a big hit! I used a prepared graham cracker crust and didn’t want to make two…so I did a quick guesstimate on the proportions. The nice thing about it is that you can eyeball it and just taste test it until it fits the pan and tastes to you liking. I normally love Breyers ice cream because it doesn’t have all the additives of other brands, but truthfully…it didn’t have enough strawberry flavor for me..so I took some fresh strawberries and mashed them a bit and added them to the ice cream. Worked out just fine. It also added some texture to it. I don’t think I added a similar proportion of strawberry lemonade concentrate to it…chickened out…was afraid it would be too sour. Next time I think I’ll be a little bolder and add some more.I also would like to add some other ingredient to this for additional texture or maybe a little crunch. Not sure what that will be.. got any ideas???? I loved piping the cool whip on top. Looks so much nicer that way! What a great idea!!!
