Hi Carol! We haven’t tested these bars for freezing but they should be okay to freeze and then thaw later. I’d recommend letting them in the fridge before bringing them to room temperature. All the best to you!

I have substituted the sugar with monk fruit and Swerve powder sugar, making it less calories. But as a fall treat I used Dutch apple pie for the filling. So delicious! My family thought it was a Hugh hit and took the leftovers home. I did safe enough for breakfast today. Thank you so much for this recipe.

Thanks, Myra! This is a fun one to try as a rhubarb newbie. 🙂 The rhubarb doesn’t need to be strained after cooking. Although strings are visible, it doesn’t have a celery texture and I would say it gets more soft/mushy rather than stringy after cooking. I realize that sounds unappetizing but I promise it works when mixed with cooked berries! 🙂
