Hi Corrine! You can definitely experiment with the recipe to make it more chocolatey. If you replace the white chocolate with dark chocolate, the flavor of the strawberries and rose water in the filling may not be as strong (just something to keep in mind). You could also make the tart crust and filling using this recipe for chocolate-raspberry tarts and just replace the raspberry components with strawberries.
