Hi Kristen, did you do the initial 15 min bake at 350 and then lower the temperature? That step helps because the temp doesn’t automatically switch to 200, so the cake is baking at a gradually cooling (but still warmer) temperature for much of the time. You didn’t mention it so I wasn’t sure. Hopefully it turned out okay with additional baking and you can enjoy a tasty cheesecake this Christmas. 🙂

I followed them precisely and the top is still very undercooked at the end of the 55 minutes. I put a toothpick in and it came out very battery, leaving a hole at the top like it was still all undercooked batter. I’ve never baked a cheesecake as low as 200, the lowest I have done is 300, so i just want to make sure I’m following correctly…
